α-glucosidase is potential enzyme for the biosynthesis of complex carbohydrates.
[Chemical Properties]

This product is a clear amber to dark brown liquid preparation, or a white to light brown powder. The main enzymes are α-amylase (liquefying enzyme) and β-amylase (maltoamylase). The main function of α-amylase is to hydrolyze the α-1,4-glucan bonds in polysaccharides such as starch and glycogen into dextrins, oligosaccharides, and monosaccharides. The main function of β-amylase is to hydrolyze the α-1,4-glucan bonds in polysaccharides such as starch and glycogen into β-limit dextrins.
