This class of toxic plant lectins (MW depends on species; CAS 9008-97-3)
is a carbohydrate-binding protein, consisting mainly of the leukoagglutinins
PHA-L and PHA-E, indicating their ability to agglutinate leukocytes and
erythrocytes. Phytohemagglutinins occur at the highest concentrations in
uncooked red and white kidney beans, green beans, broad beans, and fava
beans. Phaseolus vulgaris phytohemagglutinin consists of seven different
glycosylated polypeptides. Phytohemagglutinins induce mitosis, alter
membrane transport, and increase membrane permeability to proteins. In
humans, poisoning can be induced from as few as five raw beans, with
symptoms occurring within three hours, beginning with nausea, then
vomiting, followed by diarrhea. Medical intervention is rarely required. | [in vivo]
