Uses

Ethyl 2,2-Diethoxypropionate can be used as positive allosteric modulators of sweet taste.

Application

Ethyl Pyruvate Diethyl Acetal (ethyl 2,2-diethoxypropanoate) is used to react with nucleophiles give various α-difunctional products; useful reagents for synthesis of heterocyclic compounds; several interesting results are obtained through transacetalizations.

Preparation

Ethyl 2,2-Diethoxypropionate is prepared by acetalization of ethyl or methyl pyruvates (ROH, HC(OR)3, HCl or TsOH or H2SO4; HOCH2CH2OH, TsOH, C6H6, Dean Stark).

Ethyl 2,2-Diethoxypropionate should be stored at low temperature.
