TANNASE Chemical Properties, Uses, Production

Chemical Properties

Pale black powder. Optimal pH: 5.5-6.0, optimum temperature: 33°C. Its main function is to hydrolyze tannins into tannic acid, glucose, and gallic acid.

Uses

Tannase from Aspergillus ficuum has been used:

  • as a standard to determine the tannase activity of bacterial isolates
  • to study its effects on the inhibitory activity of tannic acid on biofilm formation
  • to obtain Proanthocyanidins (PA) by enzymatic hydrolysis of grape skin and seeds

Biochem/physiol Actions

Tannase catalyzes the hydrolysis of tannic acid to produce gallic acid and glucose.
