Uses
Polyglycerol polyricinoleate is an emulsifier which is a yellowish, viscous liquid composed of polyglycerol esters of polycondensed fatty acids from castor oil. it is lipophilic , being soluble in fats and oils but insoluble in water. it is used in reducing the friction of chocolate particles to obtain better flow when melted. it also func- tions to reduce the fat content of chocolate when replacing cocoa butter. uses include chocolate candy bars, confectionary. also termed pgpr.
