| Chemical Properties | Decomposes high molecular viscous glucans into low-viscosity isomaltose and isomaltotriose. Hydrolyzes 1,3-β- and 1,4-β-glycosidic bonds in β-D-glucan to oligosaccharides and glucose. Suitable pH value for action: 6.0-6.5 for those produced by bacteria; 4.0-4.5 for those produced by mold. generally stable at pH 6-9, such as at pH 8.0 and 35 ℃ for 3h, the activity is basically unchanged, to 45 ℃ about 20% lower activity, 50 ℃ 70% lower. When the presence of calcium ions in the aqueous solution is extremely stable, and heat resistance has increased, glycerol to help prevent the decline in activity, and to contain 40% to 60% of the most effective. Glycerin helps to prevent the activity from decreasing, and it is most effective when it contains 40% to 60%. The product is off-white amorphous powder or liquid, can be added with carrier and diluent. Dextranase from Penicillium sp. are stable at varying temperature and pH. | | Biochem/physiol Actions | An endodextranase that hydrolyzes -(1,6)-glucosidic linkages in dextran. Dextrans are undesirable compounds synthesized from sucrose by microbial contaminants during sugar production that increase viscosity of the flow and decrease industrial recovery. Dextranase has been used for hydrolyzing dextran at sugar mills in order to improve efficiency of sugar production. |
