| | SODIUM STEAROYL LACTYLATE Usage And Synthesis |
| Chemical Properties | White powder. Melting range 46–52C. | | Uses | sodium stearoyl lactylate is an emulsifier. It can be obtained from natural or synthetic sources. | | Uses | Emulsifier; dough conditioner; whipping agent
in baked products, desserts, and mixes; complexing
agent for starches and proteins. | | Flammability and Explosibility | Not classified | | Safety Profile | When heated to decomposition it emits acrid smoke and irritating fumes. | | Synthesis | One-step method
Lactic acid and stearic acid are put into the reactor according to the molar ratio of 2:1, add the concentrated sulfuric acid of 1.5% of the mass of stearic acid, and react at 105?? for 4h until no water evaporates; after the reaction is over, lower the temperature, and slowly add the sodium hydroxide solution to neutralize it, and it can be formulated into the emulsion product with solid content of 10%.
Two-step method .
Polymerize lactic acid under mildly reduced pressure, then add stearic acid for esterification under the condition of passing carbon dioxide, then add sodium carbonate to neutralize to get powdery product, but it is quite difficult to control the degree of polymerization of lactic acid in this method, which leads to unstable product quality.
Three-step method .
First, stearoyl chloride and lactoyl lactic acid are made separately, and then the two are acylated and neutralized. |
