Salivaricin B is a broad-spectrum bacteriocin that can be produced by Lactobacillus M7. It is a peptide composed of 25 amino acids that can inhibit the growth of Listeria monocytogenes, Bacillus cereus, Brochothrix thermophhacta, Enterococcus faecalis, and various lactobacilli.
