순도시험

  (1) 비소 : 이 품목을 비소시험법에 따라 시험할 때, 그 양은 1.3ppm 이하이어야 한다.

  (2) 납 : 이 품목 5.0g을 취하여 원자흡광광도법 또는 유도결합플라즈마발광광도법에 따라 시험할 때, 그 양은 2.0ppm 이하이어야 한다.

  (3) 카드뮴 : 이 품목 5.0g을 취하여 원자흡광광도법 또는 유도결합플라즈마발광광도법에 따라 시험할 때, 그 양은 1.0ppm 이하이어야 한다.

  (4) 수은 : 이 품목 0.1g을 취하여 수은시험법에 따라 시험할 때, 그 양은 1.0ppm 이하이어야 한다.

  (5) 단백질 : 이 품목 약 3g을 정밀히 달아 질소정량법에 따라 시험하고 여기서 얻은 질소량에 질소계수 6.25를 곱하여 단백질 양을 구할 때, 그 양은 2.2% 이하이어야 한다.

  (6) 메탄올 : 이 품목을 「파프리카추출색소」의 순도시험 (5)에 따라 시험할 때, 그 양은 150ppm 이하이어야 한다.

  (7) 살모넬라 : 이 품목은 「식품의 기준 및 규격」 일반시험법의 미생물시험법 중 살모넬라에 따라 시험할 때, 음성(-)이어야 한다.

확인시험

  (1) 이 품목의 함량 측정항에서 얻은 시험용액은 파장 495nm 부근에 극대흡수부가 있다.

  (2) 이 품목 1g을 취하여 0.1N 염산 50mL를 가하여 흔들어 혼화한 다음 필요하면 여과한다. 여액은 등적색을 나타내며 수산화나트륨시액을 가하여 알카리성으로 할 때, 자～적색으로 변한다.

정량법

  이 품목 약 800mg을 정밀히 달아 물․2N 염산의 혼액(97 : 3)을 가하여 1,000mL로 한 것을 시험용액으로 한다. 물․2N 염산의 혼액(97 : 3)을 대조액으로 하여 액층 1cm 파장 495nm 부근의 극대흡수파장에서 시험용액의 흡광도(A)를 측정하여 다음 계산식에 따라 함량(%)을 구한다. 단, 시험용액의 흡광도가 0.2～0.25의 범위에 들도록 검체량을 조절한다.

정의

정    의  이 품목은 선인장 Nopalea coccinellifera 등에 기생하는 연지벌레 암컷인 Dactylopius coccus Costa(Coccus cacti. Lnnaeus)의 건조충체를 물—알콜성용액으로 추출한 다음 그 알콜성분을 제거시켜 얻어진 농축물로서 카민산(carminic acid)을 주성분으로 하는 것이다. 다만, 함량조정, 품질보존 등을 위하여 희석제, 안정제 및 용제 등을 첨가할 수 있다.

화학적 성질

Cochineal is a red coloring material from the dried bodies of the female insect Coccus cacti and harvested from cultivated cacti. The raw material is obtained primarily from the Canary Islands and parts of South America. Boiling cochineal with mineral acid produces carmine red (ClH12O7). Precipitating a mixture of cochineal and alum produces a bright red pigment. Cochineal is used as a color additive in food, drugs and cosmetics. It is also used as a microscopic stain and biological marker.

용도

Cochineal is a red colorant extracted from the dried bodies of the female insect coccus cacti. The coloring is carminic acid in which the water-soluble extract is . It precipitates at ph 3, has good stability at ph 4, and excellent stability at ph 5–8. It has low tinctorial strength and has excellent stability to heat and light. It is also stable in retorted protein systems where other food dyes are unstable. It is used in foods requiring red coloring.

Essential oil composition

The principal pigment in cochineal is a protein-bound glycoside of the anthraquinone, carminic acid.
