Chemical Properties
Propyl 2-furanacrylate has a light strawberry-, apple-, pear-like odor. It has a fruity, caramellic flavor at low concentrations, turning bitter at higher levels.
Uses
Propyl 2-Furanacrylate is a synthetic flavoring agent that is a stable, colorless to light yellow liquid of fruity odor. It should be stored in glass or tin-lined containers. It is used in flavors for apple, pear, and raspberry with applications in beverages, candy, and baked goods at 1–3 ppm.
Preparation
By esterification of n-propanol with furanacrylic acid.
Taste threshold values
Taste characteristics at 25 ppm: fruity, sweet, spicy, honey and tropical.
Synthesis
Propyl 2-Furanacrylate is synthesized by azeotropic esterificat ion of n-Propanol with Furanacrylic acid.
