2-Methyl-2-pentenoic acid Usage And Synthesis
DescriptionMay be prepared by distillation of 2-hydroxy-2-methylvaleric acid (m-form).
Chemical Properties2-Methyl-2-pentenoic acid has a fruity odor.
Chemical Propertieswhite semi-transparent crystalline
Chemical PropertiesWith a dry acid note, 2-Methyl-2-pentenoic Acid is found in the odor of strawberries. The acid can be prepared from the corresponding saturated one by α-bromination followed by dehydrobromination.
It is used in fragrances to enhance fruity notes and in strawberry flavors.
OccurrenceReported found in strawberry
Uses2-Methyl-2-pentenoic Acid (CAS# 3142-72-1) can be used for cleansing and refreshing hair and scalp. It can also be used to store and cure food products, and for providing a long-lasting strawberry odor.
DefinitionChEBI: 2-Methyl-2-pentenoic acid is a methyl-branched fatty acid. It is a conjugate acid of a 2-methyl-(2E)-pentenoate(1-).
PreparationBy distillation of 2-hydroxy-2-methylvaleric acid (cis-form).
Taste threshold valuesTaste characteristics at 50 ppm: sour, acidic, sweaty, berry and fruit-like.

2-Methyl-2-pentenoic acid

3142-72-1

General procedure for the synthesis of 2-methyl-2-pentenenitrile (CAS: 99839-14-2) as a raw material for the synthesis of 2-methyl-2-pentenoic acid: 220 g of 65% phosphoric acid was added to the reaction flask and the temperature of the reaction system was raised to 100 °C. The temperature of the reaction system was raised to 50 °C. The reaction flask was then charged to the reaction flask. 100 g of 2-methyl-2-pentenenitrile was slowly added dropwise over a period of 5 hours, and the temperature was lowered to 50 °C after completion of the dropwise addition. To the reaction mixture was added 150 g of water followed by extraction with 300 g of toluene in three portions (100 g each). The organic phases were combined and purified by distillation. The solvent was first recovered and then the fractions were collected at 82 °C/3 mmHg to give 110 g of 2-methyl-2-pentenoic acid in 98.5% purity and 92% yield.
