It typically appears as a white to pale yellow powder, waxy substance, or lump, or as a colorless to slightly yellowish viscous liquid. It is odorless or has a slightly oily odor, and tastes slightly sweet and bitter. It generally has no distinct melting point and is very stable below 120°C, decomposing above 145°C. Sucrose monoesters are readily soluble in water, while diesters and triesters are poorly soluble in water but readily soluble in oils and non-polar solvents. The HLB value for monoesters is 10-16, for diesters 7-10, and for triesters 3-7. Saponification occurs when heated under acidic or alkaline conditions. The oral LD50 (of sucrose soft fatty acid esters) in rats is >30 g/kg, and the Adl is 0-20 mg/kg (tentative, FAO/WHO, 1996). | [Uses]
