Description

3-Hexenyl isovalerate has a powerful, sweet, green odor of apple and a buttery, apple-like taste. This substance may be synthesized by esterification of ds-3-hexenol with isovaleric acid.

Chemical Properties

Colorless liquid with an apple-like and grassy aroma and sweet taste. Boiling point: 199°C. Soluble in ethanol, propylene glycol, and most fixed oils, but insoluble in water.
