L-Ascorbyl 6-stearate Chemical Properties, Uses, Production
Chemical Properties
Slightly glossy white crystalline powder. Melting point is about 116℃. Basically stable in dry state, very easy to oxidize in hygroscopic state, so that the effectiveness as vitamin C is reduced. Insoluble in water, soluble in peanut oil (0.09%), cottonseed oil (0.05%).
Uses
L-ASCORBYL 6-STEARATE is used as nutritional supplement and antioxidant. It is a lipophilic substance with vitamin C efficacy. In food, it can fortify vitamin C and prevent oxidation. It can be used in oils and fat-containing foods, such as butter, cheese, milk powder, condensed milk, margarine, animal and vegetable oils, ham, sausages, chocolate, chewing gum, hard candy, etc.
