Application:
Enzyme preparation. It is mainly used to decompose tannins in instant tea to improve the cold solubility of the finished product and avoid turbidity during cooling. When using, add 2.5G tannase preparation per liter in the chemical Book tea extract with pH value of 5.5-6, stir at 30 ℃ for 70min, then raise the temperature to 90 ℃ to kill the enzyme, and centrifuge to remove the tannase.
